About the Role:
An opportunity has arisen for a Chef de Cuisine to join our LAH LAH Kitchen Department in Zabeel House by Jumeirah The Greens. The main purpose of the role is to supervise kitchen operations and ensure personal and team compliance with established F&B policies, practices and standards in order to consistently deliver high quality product.
The main duties and responsibilities of this role:
Optimize the use of materials, manpower in daily operations to ensure maximising revenue and guest satisfaction.
Development of new menu ideas to ensure all menus are seasonal and creative using the finest ingredients and working within the brief.
Complete day-to-day activities by following all relevant departmental policies, processes, standard operating procedures and instructions so that work is carried out in a controlled and consistent manner while delivering a quality service to guests and maintaining standards of excellence.
Adhere to all relevant Health, Safety and Environment procedures, instructions and controls so that Company provides world class and luxurious hospitality services to its guests.
Comply with local health and hygiene regulatory requirements by continuously reviewing the standard and quality of raw foods purchases, reviewing kitchen operations and product standards.
Liaise with internal and external parties at the appropriate levels to ensure smooth flow of operations.
Set service and food standards in compliance with the international policies and standards.
Ensure all rotation of stock is done correctly and all chefs follow the correct storage procedures ensuring the appropriate stock level.
Monitor and account for food wastage within the active inventory system.
Control all inventory and purchasing and ensure all Inventory information is posted on the system before cut off deadline.
Liaison with all sections of the kitchen to ensure efficient service and maintain high levels of communication with colleagues and other staff.
Supervise the pass and check every dish sent from the kitchen before going to the guest to ensure standard are maintained.
Monitor local and international food trends to ensure food is at the cutting edge of variety, standard and presentation at all times.
Perform related tasks and duties as assigned and deemed responsible by management.
The ideal candidate for this position will have the following experience and qualifications:
College Degree in Culinary Arts or similar from an accredited Culinary School.
Standalone restaurant experience
Minimum of 2 years’ experience as Chef De Cuisine
Previously worked in a High-volume – Specialty Pan Asian Restaurant
Strong background in Pan Asian/Thai/Vietnamese/Indonesian and Chinese cuisine
Experience in managing a kitchen as Chef De Cuisine
Experience in High end/High volume restaurants
Creative and up to date on both local and international food trends
Highly motivated and innovative
Ability to work under pressure.
Ability to lead and coach a team.
Passionate and creative
High level of attention to detail
Strong knowledge of all sections within the kitchen
Always conform to health and hygiene regulations
